Baked Oatmeal

INGREDIENTS

  • 6 cups Oats

  • 4 Eggs or ¼ cup ground flaxseed meal + ¾ cup water

  • ½ cup Oil

  • 2 cups Milk (dairy or non-dairy)

  • ½ cup Maple Syrup

  • 1 ½ tsp. salt

  • 1 ½ tsp. baking powder

  • 1 TBSP cinnamon (ceylon)

  • 2 cups fruit of your choice

INSTRUCTIONS

  1. Preheat oven to 350º. 

  2. Mix all ingredients together in a bowl

  3. Transfer batter to a greased 8 x 12 roasting pan or scoop into silicone jumbo muffin pans

  4. Bake for 45 minutes at 350º.  (reduce baking time to 30 minutes for muffins)

  5. Cool.  Store refrigerated in an airtight glass container or individual portioned containers.

  6. To reheat top portion with milk, reheat on the stove top or microwave for 1 minute.

  7. Top with sprouted seeds, nuts, fruit, cinnamon, or maple syrup as desired.
